Cook time: 10 mins.
Ingredients:

Mixed greens
1/2 Tomato
2 carrots
1/2 cucumber
handful cilantro
olive oil
- chicken breast salt
- pepper
Materials:

Cheese shredder or Cuisinart
Chef knife
Large pan / Stove
Directions:

Place pan on medium/high with 2 Tbs. olive oil. Slice chicken into 1 inch x 2 inch slices and place into pan. Allow to cook for 10-12 minutes. Let chicken sear into oil/pan 3-5 mins on each side in order to get a crispy surface. Sprinkle some salt as cooking on pan.
While chicken is on pan, start prepping plate(s). Add a bed of mixed greens onto bottom.
Slice tomato and add to side.
Use cheese grater / Cuisinart to make carrot and cucumber shreds and place on side.
When chicken has completed cooking, place on top of salad.
Drizzle olive oil and add salt/pepper as desired. Enjoy!
Optional Ideas! Change it up! Add in other veggies like beansprouts or broccoli. Also you can throw in some fruit like mangoes or pineapple. If you like it hot, then add some jalapeno slices and some siracha to top it off!
